May Wine Club Selection
One ton of Sauvignon Blanc from Danielle’s Vineyard was picked with to make this reserve style wine. Grapes were separated from the stems and left to macerate (fancy word for soak) for twenty-four hours. The limited skin contact adds complexity and richness to the wine; expressed through the light straw color and round palate. Fermented and aged for ten months in 33% new Acacia Wood/French Oak barrels. Guava and peach are rounded out by smooth coconut extracted from the time spend in barrel. 75 cases produced.
